Spinach and nut pancakes

For 4 people


  • 350g fresh (or frozen) spinach

  • 150g of Nutty Bay Cashew Delight Garlic (about 3 tablespoons)

  • 120g of walnut kernels

  • 10cl of water (or wine)

  • 1 shallot

  • 1 clove of garlic

  • 2 tablespoons of vegetable oil

  • Salt, peppe



  • Stalk and wash the spinach. Peel the garlic clove and shallot, press the garlic and chop the shallot.

  • In a hot frying pan (or saucepan), pour the oil and then add the garlic and shallots, to be gently coloured over a high heat while stirring.

  • Add the spinach and seasoning (salt and pepper) and cook while stirring continuously for less than a minute.

  • Add water (or wine) to deglaze the whole.

  • When the water is simmering, add your Nutty Bay Cashew Delight Garlic and stir until the texture is creamy.

  • Garnish the patties and add 30g of walnut kernels to the hot patties.
